Salted Almonds

Here is my recipe for salted almonds (almendras saladas), they make a great tapas dish or can just be eaten as a snack (my kids love these!)


250g almonds (you can use blanched but I like them with the skins on!)
1 tbsp olive oil
1 tbsp butter
1/2 tbsp good quality sea salt
pinch of cayenne pepper to taste


Warm the olive oil in a frying pan and fry the almonds until they start to go golden brown and crispy on the outside. Add the butter and coat the almonds in the warm butter for the last minute or so.

Pour the almonds briefly onto some kitchen towel to remove some of the excess oil and butter (I am trying to keep it healthy!) then transfer them to a bowl with the salt and cayennne pepper, mix well.

I love these salted almonds and often order them with some olives and a beer when I am in Spain. They are just perfect to nibble on while you are sat watching the world go by!
