Catalan sausage and beans - with tomato and herb sauce

This simple but scrumptious dish is inspired by the many sausage and bean stew dishes that are served in Catalonia and all across Northern Spain. Sausages are big business in Spain and there are an amazing variety available. This dish uses a simple Catalan-style pork sausage but any good pork sausage will do.

The secret to this sausage and beans recipe is the wonderful sauce which is rich with the flavours of tomato, sage and oregano and it is worth spending the time to get the sauce just right.

This dish is very versatile and could be served as a small tapas dish or made on a large scale as a family stew. It is nice served simply with some soft bread or accompanied by some spinach, wilted in a pan with some garlic, olive oil and seasoning.

Shopping list

  • extra virgin olive oil (aciete de oliva)
  • 1 onion (cebolla)
  • 1 clove of garlic (diente de ajo)
  • 6 tomatoes (tomates)
  • 1 tsp chopped sage (salvia picada)
  • 1 tsp chopped oregano (orégano picado)
  • 1 tsp mild paprika (pimentón dulce)
  • i tbsp tomato puree (puré de tomate)
  • 1 tsp golden caster sugar (azúcar en polvo dorado)
  • 2 pork sausages (salchichas de cerdo)
  • 1 can of butter beans (lata de judías blancas)
  • salt (sal)
  • freshly ground black pepper (pimienta recién molida negro)

Method for Catalan sausage and beans

To prepare the sauce, cut a cross on the base of each tomato and then cover in boiling water for 15-20 seconds. Drain and then cover in cold water and then remove the skins. Next, carefully core and seed the tomatoes and place the discarded parts in a sieve over a bowl and squeeze out the juice. Finely chop the flesh of the tomato.

Very finely chop the onion and garlic and sweat gently in a tablespoon of olive oil for a few minutes until soft. Then add the chopped tomato flesh and the drained juice and cook gently for 10 minutes. Then add the sugar, herbs, butter beans, paprika and tomato puree, season with salt and pepper and continue to cook gently for another 5-8 minutes or so until the sauce is thick and rich.

Meanwhile fry the sausages in a tablespoon of olive oil until browned and cooked through, this should take about 8 minutes.

For an impressive presentation, serve the sausage on a bed of the sauce and garnish with a few sage and oregano leaves and a dusting of mild paprika.
