Despite the title, the book is not all about tapas, but it is designed so you can just pick and choose dishes from anywhere in the book rather than follow the usual routine of courses. Omar wants you to fully embrace the Spanish mentality of dining, but in your own time and on your own terms.

The book states that the recipes are simple and in most cases they are - chorizo with cider is as easy as it gets - but there is the odd one, like Cocido Madrileno, that might scare the hell out of a complete novice.  This is a good reflection of how the book should appeal to cooks of all capabilities; in fact, it could end up being the Spanish cook book of choice for UK households.


If you have eaten tapas in Spain then you should be able to find all your favourite dishes in here as well as many classics dishes from all over the country that may be less familiar. The recipes are laid out in a simple and precise way and are complimented by enticing photographs to get you in the mood.

So where should you start? If you are new to Spanish cooking, then start with something simple. I would recommend going straight to the Pimientos Asados (roasted red peppers) and discover just what you can do with one basic ingredient and some simple seasoning. You will be amazed at the results and it may just open a door to a whole new way of thinking about food.
